Notes:

If you like these spicy, you can add green chilies chopped up.

Chaat masala, cilantro, and chilies( or jalapeños for a less spicy version) are optional but recommended.

If you do not have an air fryer, you could bake these in an oven.

Eat these immediately or they will lose their crispiness. Doubtful that you would have any left😁 but if you do, they can be reheated in the air fryer for a few minutes.

But air fryer to the rescue!! I cannot tell you how much I love my air fryer! It really is a genius invention!

So here is my version of air-fried cauliflower Manchurian which tastes very much like the deep-fried version.

How do you make this Air Fryer Cauliflower Manchurian?

Wash the cauliflower florets. Microwave for 2 minutes with water and turmeric powder. Drain and keep them aside.

Whisk the dry ingredients in a bowl.

In another bowl put your buttermilk. If you do not have buttermilk, you can mix 1 cup milk with 1 tbsp of white vinegar.

Now dip the cauliflower florets in the buttermilk and then toss them in the flour mixture. They should be nicely coated. Do the same for all the florets.

Drizzle oil on them and put in the air fryer at 375 for 8 minutes, and 400 for 2 minutes.

Air fry all the florets and keep them aside.

To make the Manchurian sauce:

Chop the onions, ginger, garlic, green chilies, and scallions if using.

Mix the ingredients for the sauce and keep it ready.

  • ½ cup all-purpose flour
  • 2 tbsp cornstarch (cornflour)
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  • Microwave the cauliflower florets for 2 minutes with a little water and a pinch of turmeric powder. Once done, drain and set them aside.
  • In a bowl, whisk the flour, cornstarch, salt, and pepper.
  • Pour the buttermilk into another bowl. (Mix 1 cup milk and 1 tbsp. vinegar to make buttermilk)
  • Dip the cauliflower florets in the buttermilk, then put them into the flour mixture and toss them around till they are coated. Remove them onto a plate. Do the same until all the florets are coated.
  • Drizzle oil on the cauliflower florets.

  • Add the sauce mixture and fry. Add the red onion and green bell peppers. Stir fry for a minute.
  • Next, add the air-fried cauliflower florets and toss to coat with the sauce. If needed add salt to taste.
  • Fry for a minute more and switch off the flame. Garnish with chopped cilantro and the green parts of the scallions.
  • Enjoy your delicious healthier version of Cauliflower Manchurian!

Air fryer caulifower manchurian

NOTES:

The same method can be used to make Manchurian with mushrooms, paneer, tofu, chicken, pork, etc

The cauliflower can be steamed or boiled on the stovetop as well, but whichever way you pre-cook it, make sure to undercook it and not overcook it. Because it will cook more in the air-fryer and in the sauce. I always do it in the microwave for 2 minutes, it turns out perfect every time.

If you find your sauce is too spicy in the end, you can add more tomato ketchup and mix it. If you prefer it spicier add extra green chilies or chili sauce.

To make buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar, that is how I make buttermilk for any recipe that calls for it.

I did not use Scallions as I did not have them, but if you have them I do recommend using them in this recipe.

If you do not have an Air Fryer, you can bake the cauliflower in an oven at 400F for about 8 to 10 minutes.

Fried Masala Mushrooms – Deep-fried Vs Air-Fried!

Fried Masala Mushrooms

These Fried Masala Mushrooms – Deep-fried Vs Air-fried are such a treat! You can serve these as an appetizer or snack. They can also be an accompaniment to any meal.

I like mushrooms but struggle to find different ways of cooking them. So I decided to cook them this way as let’s face it, who does not like fried food?! As I am a big fan of the Air Fryer, I decided to try them in an Air Fryer as well. So read on to find out how it is done, and how it turned out!

If you have any leftovers(if there are any!😁), give them a makeover and make Mushroom Manchurian(bonus recipe included)!

Whichever way you eat it, these mushrooms will be your new favorite!

What are the ingredients required for Fried Masala Mushrooms – Deep-fried Vs Air-fried?

Ingredients for Fried Masala Mushrooms

Mushrooms- Button mushrooms, I’m sure you could make these with baby Bella mushrooms as well. If you do try them out let me know if it works.

I wash the mushrooms and dry them thoroughly. I know most people say don’t wash mushrooms but I do as that’s the only way to get rid of stuck-on dirt. Moreover, I have never had a problem with washing and then cooking them.

Oil – For deep frying use a high heat oil like Vegetable Oil, Canola Oil, Peanut Oil, or Sunflower Oil.

For the masala coating:

Chickpea flour or Besan – you can find this flour in any Indian store. Bonus it is gluten-free!

Rice flour – This flour can be found in an Indian store as well.

Ginger garlic paste (optional)

Kashmiri Chili Powder

Turmeric powder

Cumin powder

Pepper powder

Chaat masala powder

Salt to taste

Water to mix

How do you make these Fried Masala Mushrooms – Deep-fried Vs Air-Fried?

Add all the dry ingredients for the batter together in a mixing bowl, and use a whisk to mix them.

Add water a little at a time to get a smooth batter. I used about 1/2 to 3/4th cup. The batter should not be thin, it should be on the thicker side.

Add the mushrooms to this mixture and coat them well.

How do you fry these mushrooms? I tried 2 ways. DEEP FRIED Vs AIR FRIED

DEEP-FRIED

Fried Masala Mushrooms
Deep-fried Masala Mushrooms

In a cast-iron pot, heat oil, I used canola oil.

When the oil is hot, add mushrooms one by one, they should start sizzling as soon as you put them in. That’s a good indication that the oil is at the right temperature. Let the flame be on medium.

Turn them after a few minutes. Fry them till they are crispy about 8 to 10 minutes.

Take them out and put them on a plate lined with a paper towel to absorb the extra oil.

Serve them hot! They will become soft as they sit. But you can always warm them up in a toaster oven or air fryer.

AIR-FRIED

Fried Masala Mushrooms
Air-Fried Masala Mushrooms

If you have seen some of my previous recipes, you probably know that I love the Air Fryer! So I had to test this out in the Air Fryer to see for myself how they compared to the deep-fried Mushrooms.

First, line the air fryer basket with foil. Then brush a little bit of oil on the foil.

Drizzle some oil (1 tablespoon) on the coated mushrooms and mix.

Using tongs, place battered mushrooms on the foil in the Air Fryer.

Close the Air Fryer basket and switch it on to 400 degrees for 10 minutes.

Turn the mushrooms once in between.

After 10 minutes your crispy air-fried mushrooms are ready!

Taste-wise I would say surprisingly both tasted equally good!

The only thing with using the Air Fryer was that you can only put it a little at a time. So it might take longer depending on the quantity you are making. And it does tend to stick to the foil a bit. Next time I would try parchment paper.

Enjoy your fried masala mushrooms with some tomato ketchup or Sriracha sauce!

Ingredients

  • 15-20 Button Mushrooms
  • 2 cups Canola Oil (for deep frying)

For the batter

  • ½ cup Chickpea flour (Besan)
  • ¼ cup Rice flour
  • 1 tsp Kashmiri Chili powder
  • ¼ tsp Turmeric powder
  • ¼ tsp Cumin powder
  • ¼ tsp Pepper powder
  • ½ tsp Chaat masala powder
  • 1 tsp Ginger garlic paste (optional)
  • 1 tsp Salt (or to taste)
  • ½ to ¾ cup Water

Instructions

  • Wash and dry the mushrooms. Cut them into 4 depending on the size of them If they are small you can cut them in half. Keep them aside.

To make the batter

  • Mix all the dry ingredients in a big bowl using a whisk or a fork.
  • Add water a little at a time, using a whisk, mix until you get a nice batter consistency. It should not be too thick nor too thin. The batter should be able to coat the mushrooms.
  • Add mushrooms to the batter and mix until all the mushrooms are coated evenly with the batter.

To deep-fry:

  • Heat oil in a cast-iron pan. When the oil is hot, drop the mushrooms into the hot oil. It should sizzle as soon as it goes in. Fry the mushrooms on both sides till crispy. This should take about 6 minutes or so.
  • Take them out and drain them on a paper towel. Fry them in batches without overcrowding the pan.
  • Serve hot with Sriracha or Tomato Ketchup.

To Air-Fry

  • Line air-fryer basket with foil or parchment paper.
  • Brush the foil or paper with oil. Drizzle about 2 tablespoons of oil on the battered mushrooms. Mix well.
  • Using tongs, put the mushrooms into the Air-Fryer basket leaving space in between each one.
  • Close the basket and switch on your Air Fryer to 400° for 10 minutes.
  • Turn the mushrooms once in between.
  • After 10 minutes, take them out of the Air-Fryer and enjoy!

Fried Masala Mushrooms

Notes:

  1. To make it spicier, use more Chili powder or add chopped green chilies or jalapenos.
  2. You can use the same batter for other vegetables as well. Good options are onions, cauliflower, bell peppers, zucchini, broccoli, etc
  3. If you do not have an Air fryer and want to make this without deep frying it, I am sure you can use your oven at 400F, and bake the mushrooms for maybe 15 minutes. Let me know if you do try it out in your oven.
  4. To re-heat these mushrooms, you can use a toaster oven or the Air-fryer. They do become soft after a while.

If you happen to have leftovers, I did because I made so much! I decided to experiment with making Mushroom Manchurian.

Bonus recipe using Fried Masala Mushrooms!

Mushroom Manchurian

Chop up a quarter of an onion (or use scallions), 5 cloves garlic, 1-inch ginger, and 2 green chilies.

Sauce – To make this easy sauce, add 1/4 cup soya sauce, 1 tbsp vinegar, 2 tablespoons tomato ketchup, 1 tablespoon chili sauce(I used Sriracha) to a bowl. Mix it up.

In a pan, heat some oil. When the oil is hot, add all the chopped ingredients. Fry well till slightly brown. Add your sauce and mix well.

Put in your fried mushrooms and mix well to coat them with the sauce. I did not add any salt and didn’t need to. But you can taste it and add if required.

I also added a squirt of tomato ketchup as I felt it was too spicy.

So you can adjust the spice accordingly. Garnish with lots of chopped cilantro or scallion greens.  Enjoy your easy and tasty Mushroom Manchurian

It turned out delicious in the end!

Air-Fryer Potato Wedges

Air Fryer Potato Wedges

These Air-Fryer Potato Wedges are the perfect solution for your family’s French Fry cravings!! These are homemade, baked, and not deep-fried, so you can make them often without feeling too guilty!;)

I highly recommend an Air Fryer if your family loves deep-fried foods, Check out this Highly rated Cosori Air Fryer on Amazon.

My children love french fries, I used to buy the frozen french fries at the store, but after reading what goes into them I decided to make my own version of homemade fries. I would have called them French Fries but they are not as crispy and thin as Fries, hence I’m calling them Potato Wedges! My kids enjoy these Potato wedges, they are a great alternative to deep-fried French Fries.

With an Air-fryer and some potatoes, you can have your own homemade Potato wedges in a matter of 15 minutes. If you do not have an Air-Fryer, you can bake them in an oven at 400F for about 15 minutes.

Just potatoes, salt, and a little bit of oil! You get to control the amount of salt and oil so that’s a real plus if you ask me!

Use any seasonings you like and make them according to your taste. Serve these Potato Wedges as they are or as a side to your main meal.

Which potatoes are best to use for Air-Fryer Potato Wedges?

Russet Potatoes – These potatoes are high in starch and low in moisture content so they makegreat Potato Wedge. Alternatives that you can use are Yukon Gold Potatoes.

Potatoes do get a bad reputation when it comes to being healthy, but I think it is just the way it is cooked, if you add unhealthy fats to it like deep frying then it obviously will be unhealthy.

Potatoes contain fiber, vitamin C, potassium, and Vitamin B6. So they do have some nutrients that our bodies need.

How do you make Air-Fryer Potato Wedges?

First, peel the potatoes, then wash them. Pat them dry with a kitchen towel. Slice them into thin wedges, make sure the wedges are more or less the same size.  I cut them lengthwise in the middle once, then place one half cut side down and cut into half again. Then repeat, so you can get about 8 wedges from one potato. but if your potato is big you could get more.

4 potatoes cut into wedges
Potato wedges cut from 4 medium-sized potatoes.

Pat the wedges dry with a kitchen towel, put them in a bowl, drizzle with olive oil ( about 1 tbsp), and add salt. I have read lots of recipes where the potatoes are soaked in water for about 15 minutes. I have tried this but I find that the way I have mentioned above is what worked for me.

Air frying your Potato Wedges:

Add the potato wedges to the air-fryer, bake at 400 degrees for 10 minutes turning halfway till golden brown. Add salt to taste. You could preheat the air fryer too to have your fries even faster, but I don’t. Just thought I would mention it.

Bake in 2 batches so that the wedges are in a single layer in the air fryer. It is important not to overcrowd the air fryer, If you add too many it will steam instead of frying, so make sure they are in a single layer. It is tempting to throw the whole lot in, believe me, I have tried it! But be patient and do it in 2 batches for the best results.

These are not as crunchy as deep-fried French fries but a healthier version I would say. They are crispy on the outside and soft on the inside.

Seasoning your Potato Wedges:

Once you take them out,  put them on a paper-lined plate. Check for seasoning, add more salt if required or any other seasoning you desire.

With potatoes seasoning is everything, so make sure they are seasoned well.

Enjoy your Air-Fryer Potato Wedges without feeling guilty!

Air Fryer Okra Fries

Air fryer okra fries

Air Fryer Okra Fries is one of those recipes that you will make again and again as it is that good! Okra or Ladies Finger is one of those vegetables that you can love if cooked the right way.

In India Okra is used in Sambar, Curries, or in masala form. It is also deep-fried which tastes good.

This is an experiment with my Air Fryer and the okra turned out surprisingly well! So I would love to share this recipe with you. I call them Okra fries as they are crunchy and long and kind of look like fries.

How do you make Air Fryer Okra Fries?

The okra is cut lengthwise into 4 pieces. Then add in some spices, chickpea flour, and rice flour. Drizzle with about a tablespoon of oil. Mix everything well. Sprinkle a little water and mix just until the mixture sticks to the Okra. A little dry flour here and there is fine But make sure not to put too much water as it can get soggy and will not turn out crispy.

Spread the okra in your air fryer tray, do not overcrowd it. Set the fryer at 375 degrees for 10 minutes. Turn once in between. After 10 minutes it should be crispy and nice. You can leave it in for an additional 2 minutes if you feel it needs more time. But keep an eye on it as it burns fast.

If you do not have an air fryer, you could put it in a preheated oven on a baking tray. I think the same temperature would work but increase the time to about 15 minutes.

Turn all the Okra haters into Okra lovers with this crispy crunchy snack!

Air Fryer Salmon Fish Fry

Air fryer Salmon fish

Air Fryer Salmon Fish Fry is a real favorite in my house, my kids absolutely love it.

The Air fryer is one of my favorite gadgets in the kitchen. Apart from the fact that you can fry using just a little oil, it gets the job done really fast! That’s a win in anyone’s kitchen, don’t you agree?!

If you do not have one, I highly recommend the Cosori Air Fryer.

(The above link is an affiliate link, meaning that if you decide to buy the product through my link, I will earn a small commission from Amazon at no extra cost to you. Please know that I only recommend products that I love and know to be of great quality. Thanks for your support)

Salmon is one of the tastiest types of fish that I have ever tried. It is a firm fish that stands up well when air-fried, it does not fall apart easily.

The other options that you could try are kingfish, halibut, or Mahi-mahi. Any firm fish is best.

The marinade is a few basic spices, yogurt, ginger garlic paste, salt to taste, and lime juice.

It’s best to marinate at least for an hour, but I have even air-fried the fish immediately, and it tasted good too!

Another option is marinating and freezing the fish, so you have it on hand. You could just thaw it overnight in the refrigerator and air fry like normal.

You could leave the skin on if you got it with skin. After it’s fried, the skin peels off easily. If you like eating the skin you could do so but we prefer to take the skin off.

How to make this Air fryer Salmon Fish Fry:

Turn on the air fryer to 350 degrees (F). Drizzle some oil ( around 1 tbsp) on the marinated fish pieces. You can use olive oil, canola oil, vegetable oil, or coconut oil.

Place the fish in the air fryer basket using tongs.

Make sure you do not put more than 4 pieces of fish, so there is enough air to circulate around them. Close the air fryer.

Cook for 10 minutes, turn the fish pieces in between. Once done gently remove fish from the basket, your delicious air-fried fish is ready!

The fish is so flaky and juicy. My whole family loves this air-fried fish, it is on the menu every single week!

Salmon fish fry can be eaten just as a snack, eat it with rice and dal,  eat it in a taco, pita bread, paratha, naan, etc.

My favorite is eating it with avocado salad. So delicious!

Salmon fish marinated in a spicy marinade and air fried
Course Main Course
Cuisine Indian
Prep Time 5 minutes
Cook Time 20 minutes

Ingredients

  • 6 Medium slices of salmon fish
  • 2 tbsp Whole milk yogurt
  • 1 tsp Ginger garlic paste
  • Juice of 1/2 lime

Spices

  • 1 tsp kashmiri chilli powder use extra if you like it spicy
  • ½ tsp Coriander powder
  • ¼ tsp Turmeric powder
  • 1 tsp Salt or to taste

Instructions

  • Wash and pat dry the fish pieces.
  • Mix the rest of the ingredients for the marinade. It will be a nice red color because of the kashmiri chilli powder. Do not add water, the yogurt and lime juice is enough to mix it well.
  • Add this marinade to the fish pieces and mix well so all the pieces are coated well.
  • Cover it and keep it in the refrigerator for an hour. If you do not have time to let the marinated fish sit you can fry it immediately too.
  • When ready to fry, drizzle about 1 tbsp oil all over the fish. Mix it. Place around 3 or 4 pieces of fish in your air fryer basket. Do not over crowd the basket.
  • Turn on the air fryer at 350°, and let the fish cook for 10 minutes turning once in between.
  • Once done remove from the air fryer basket. Garnish with onion rings.

Notes

Depending on the size of the fish pieces you might need to add less or more time.
Thinner slices will be done sooner than the thicker ones. Keep an eye on them so they do not burn
If you do not have an air fryer, you could still pan fry these or bake in an oven.
