Indian Lime/Lemon Rice

This Indian Lime/Lemon rice is so flavorful, it is very lightly spiced, sprinkled with fresh lime juice or lemon juice, and has a great crunch from the peanuts! This is a great way of using up your leftover white rice. 

I remember from my childhood, we used to go on picnics every Sunday. It was so much fun.

My mom would pack up our lunch, we would sit under a tree somewhere along our drive and enjoy our lime rice with chicken or mutton fry. It was just a great combination! 

All you need is some leftover white rice. I have actually tried it with brown rice and quinoa too, both options are good if you are more health-conscious. 

Lime or Lemon??

The question is to use the juice of a lime or a lemon??

Honestly, I use lime most of the time, but that being said I have also tried it with lemon juice.

So in my opinion, both limes and lemons are fine to use, but when using a lemon I would add the juice of half a lemon first, and if you feel you need more you could add more to the rice. The lime/lemon juice should not be very strong but you should be able to taste the flavor.

Whether you use lime or lemon you still get the benefits of Vitamin C from either of these citrus fruits.

Other ingredients include:

 One chopped green chili( use more if you like it spicy), half an onion chopped fine, 1/2 inch chopped ginger, a handful of roasted peanuts.

For seasoning:

Mustard seeds – Black mustard seeds

Split urad dal – White split urad dal

Curry leaves

Asafoetida

If you have curry leaves, it really enhances the flavor. But leave it out if you don’t have them. I have tried it without curry leaves and it is still good.

Heat up a pan on medium heat. Pour in a tablespoon of oil. When hot, add seasoning ingredients starting with mustard seeds, when they pop, add the rest. Give it a mix and add peanuts.

Add the onion, green chilies, and ginger. Stir.

After the onion turns translucent, add turmeric powder. This is what gives the rice its brilliant yellow color. Add the rice, lime juice, and salt to taste. Mix well till the rice is evenly mixed with all the ingredients and is a bright yellow.

Taste and adjust salt. Garnish with coriander leaves.

This lime rice comes together in under 10 minutes if you have your refrigerated day-old rice.

In case you are making the rice the same day, I suggest cooling the rice before adding it as it could turn out mushy if you don’t.

Ingredients

  • ½ Yellow onion Chopped
  • 1 Green chilli Chopped, can add more if you like it spicy
  • ½ inch Ginger Chopped
  • 2 cups Cooked rice Cold rice previously cooked is best
  • 1 tbsp Cooking oil I used olive oil, any cooking oil is fine
  • ½ tsp Turmeric Powder
  • 1 Lime/Lemon

For seasoning

  • ½ tsp Mustard seeds
  • ½ tsp Split urad dal
  • ¼ cup Roasted peanuts
  • Asafoetida A pinch
  • 1 sprig Curry leaves

Instructions

  • Heat up a pan, add 1 tbsp of cooking oil.
  • Once the oil is hot, add seasoning ingredients one by one.
  • Add chopped onions, green chillies and ginger. Fry till onions are translucent.
  • Add turmeric powder and mix.
  • Next add your cold rice and salt to taste, break it up and mix evenly. It should have a lovely yellow color.
  • Squeeze the juice of 1 lime/lemon into the rice, mix well.
  • Garnish with chopped coriander leaves.

Easiest felt flower tutorial

I love DIY and wanted to share this DIY felt flower tutorial with all of you, I call this the easiest felt flower tutorial because it really is! Just read on to find out why!

Felt flowers are so easy to make and can make great home decor. Felt comes in lots of beautiful colors, it is very inexpensive also. In Walmart, it is available for 33 cents a sheet. I’m sure if you buy it in bulk, you can get it even cheaper. 

You can find felt sheets in any craft store. Amazon also has a wide variety of colors in felt. I love working with felt, it’s soft and can be made into so many beautiful and useful things.

There are many different kinds of flowers that you can make using felt. And all of them are gorgeous! I just chose the easiest one to share.

These are easy enough for kids to make, provided they are old enough to handle a hot glue gun. I am guessing that fabric glue could be used too but I have not tried. Please do let me know if you have tried and it worked for you. 

Make them in any color and even different sizes. I love these because they can be used to make beautiful wreaths, if you add a stem you can use them in flower vases. I just gathered sticks from my backyard and used them as stems.

Supplies needed for the felt flower DIY:

Felt in different colors

Scissors 

Hot glue glue

If you are adding stems, you could just gather some sticks from your garden as I did! 

Other options that would work are floral wire or pipe cleaners. 

How do you make them? 

  1. Cut out rectangular shapes from your felt sheet. Small rectangles will yield small flowers, bigger rectangles will yield bigger flowers. 

     2.Fold the rectangle in half lengthwise. Using the glue gun, glue down the open side of the rectangle. 

     3.Using scissors cut lines at regular intervals on the folded side but do not cut all the way, leave about 1/2 inch on the other side.

    4.From one side, start rolling your rectangle gluing as you go. 

    5.To attach the stem, glue it as you start rolling in the above step. Or you could just add some glue on one end of the stick/pipe cleaner/wire and stick it in the base of the flower.

Notes

If you do not use a stem, glue your roses onto your wreath, picture frame, or whatever you make.

DIY Farmhouse Bead Garland

Have you seen these Farmhouse Bead Garlands in pictures of beautiful homes? These garlands are a very popular item for home decor. I am going to show you how easy it is to make a DIY Farmhouse Bead Garland.

I have always admired them, it adds a real decorative touch to any room. Something so simple can be used in many ways to style your home. They are draped on vases, on books, on coffee tables, on entryway tables, dressers, bedside tables, even in bathrooms!

I wanted to buy one and looked it up online, when I saw the price tag, it was anywhere from 7$ To 25$ and more!

So I decided to make this at home for a fraction of the cost. It is relatively easy and needs very few supplies.

I am sharing this DIY with all of you which is fun to make and takes less than 15 to 20 minutes! 

Supplies needed for this DIY Farmhouse Bead Garland:

Wooden beads – I got mine from Micheals, a box of wooden beads is 9.99$. They come in 3 different sizes. By using a 40% coupon you could get them for less! You could make at least 5 garlands with the quantity that you get. 

The wooden beads are also available in any craft store or on Amazon. I hear that you could buy them in bulk and it is much cheaper. 

Jute string – The jute string i found at Ross for 1.99$, you can get it at the dollar tree or Amazon. It has to be thin enough to fit through the hole on the wooden beads

Scissors 

Masking tape or cello tape – this is just used to make it easier to string the beads. Add a little bit of masking take or cello tape to the end of your string to make it kind of like a needle. 

Or you could use a large yarn needle also to make things easier.

Gather your supplies and let’s get started making our Farmhouse Bead Garland!

Super simple and easy. To summarize all you got to do is make 2 tassels, add one tassel at one end, string the beads onto the jute string, add the other tassel at the other end, and you are done!

Let’s see how to make this in detail:

 

  • To make the tassels: Wrap the string around your fingers about 20 times. Cut a piece of string to tie the tassel on top. Tie the string about half an inch from the top. Cut off the excess string once it is secure. I would even go the extra mile and add a drop of glue to seal it. 
  • Snip the bottom loops and your tassel is ready. 
  • Make 2 of them. 
  • Measure a piece of string, depending on how long you want your garland. I cut mine about 18 inches. 
  • Add the tassel to one end by simply tying it on through the loop on top. Make sure it is secure. Here also you could add a drop of glue to secure it.
  • Cut a small piece of tape and wrap it around the other end of the string, we are using this as a needle so the string does not get frayed. I recommend using a yarn needle if you have one that’s large enough to go through your beads, it does make it easier.
  • String the beads onto the string. I used around 40. It could depend on the size of your beads. You can use a combination of beads, make it your own.
  • Once all the beads are on the string, tie the other tassel on that end. Trim off the excess string. Use glue to secure.
  • Your farmhouse tassel garland is ready! 

 

NOTES:

You could color your beads if you have a specific color scheme in mind. A mix of colored and regular wooden beads can be used as I did in the above picture. 

I experimented with coloring the beads with food color. It worked well, you do not get a vibrant color but a rather nice dull color which I thought looked good with the regular wooden beads. 

Fo coloring the beads, all I did was put the beads in a bowl, added food color and just a little water, shook them up, kept them for about an hour.  Drain the excess water and kept the beads out in the sun to dry on a paper napkin. Once dry you can make your garland! It is that easy.

I am sure you can paint the beads too, I did try once and it was too much work, so I gave up!

You can also buy the colored beads/patterned beads of your choice. You get some great options on Amazon.

The garland can be tied halfway to create a loop to hang it onto a vase as shown in the picture below.

Air Fryer Okra Fries is one of those recipes that you will make again and again as it is that good! Okra or Ladies Finger is one of those vegetables that you can love if cooked the right way. 

In India Okra is used in Sambar, Curries, or in masala form. It is also deep-fried which tastes really good. 

This is an experiment with my Air Fryer and the okra turned out surprisingly well! So I would love to share this recipe with you. I call them Okra fries as they are crunchy and long and kind of look like fries.

How do you make Air Fryer Okra Fries?

The okra is cut lengthwise into 4 pieces. Then add in some spices, chickpea flour, rice flour. Drizzle with about a tablespoon of oil. Mix everything well. Sprinkle a little water and mix just until the mixture sticks to the Okra. A little dry flour here and there is fine But make sure not to put too much water as it can get soggy and will not turn out crispy.

Spread the okra in your air fryer tray, do not overcrowd it. Set the fryer for 375 degrees for 10 minutes. Turn once in between. After 10 minutes it should be crispy and nice. You can leave it in for an additional 2 minutes if you feel it needs more time. But keep an eye on it as it burns really fast. 

Do try out these crunchy Okra fries in your air fryer and you will definitely love it! 

If you do not have an air fryer, you could put it in a preheated oven on a baking tray. I think the same temperature would work but increase the time to about 15 minutes.

Crispy Okra fries in an Air Fryer

Ingredients

  • 20 to 25 Okras or Ladies Fingers
  • cup Chickpea flour or Besan
  • 2 tbsp Rice Flour
  • ½ tsp Chili powder Can add more if you like it spicy.
  • Salt to taste
  • 2 tbsp Oil Olive oil, Sunflower, Peanut, Vegetable, or Canola oil

Instructions

  • Cut each Okra into 4 pieces lengthwise. Put them in a mixing bowl.
  • Mix Chickpea flour, rice flour, chili powder and salt in another bowl.
  • Drizzle oil on Okra, and toss gently so that all the Okra is coated with oil.
  • Add in the dry mix of flours and spices, again toss it together.
  • Sprinkle a little water, mix gently with your hand so that the mixture coats the Okra.
  • Turn on the air fryer to 375°. Put half of the Okra in a single layer. Fry them for about 10 minutes, turning once in between.
  • Check after 10 minutes, if it is not crispy enough you can fry for 2 or 3 minutes more.

Notes

  • Do not add too much water when mixing, just sprinkle a little bit at a time. 
  • You can add a little garam masala powder or chaat masala powder if you like the taste of it. 
  • Keep an eye on the okra if air frying for more than 10 minutes, It tends to burn. 
  • You can still make these if you do not have an air fryer, there are 2 options, deep frying or baking them in the oven.

Air Fryer Tortilla Samosas

Air Fryer Tortillas Samosas

These Air Fryer Tortilla Samosas are so easy and tasty. 

If you love Samosas, you do know that it is a lengthy process if you wish to make it at home from scratch.  From mixing the dough to rolling it out and then stuffing and frying it. It easily takes you at least a minimum of an hour! 

Years ago when I was living in Harrisburg, Pennsylvania, my very good friend Rachel used to make these ‘samosas’ using tortillas as the outer pastry. She used to make at least 100 of these for her family gatherings! She deep-fried them and they were delicious. 

I decided to make these in the air fryer so that they could be healthier. They turned out really good and with just a little bit of oil.

The filling that I used is potatoes and peas. You could use just about any filling savory or sweet. 

Savory fillings could be:

Potato masala

Paneer and peas

Cauliflower and potato

Mincemeat

Chicken mince 

Ideas for Sweet fillings:

Any kind of jelly or jam

Chocolate or Nutella 

Coconut and Jaggery (Indian unrefined sugar)

How do you make these Air Fryer Tortilla Samosas?

You can use any brand of store-bought tortillas, flour tortillas taste best but you could use whole wheat or low carb. I have not tried these with corn tortillas so do not know how they would taste.

Ingredients to make samosa
Potato filling, Flour paste, and cut tortillas, ready to make the samosas.

Each tortilla is cut in half, so you get 2 samosas from one tortilla. You can use a knife to cut the tortilla in half or a pizza cutter like I did.

 

Fold one semi-circle into a triangle shape.

Use some flour paste ( a mixture of all-purpose flour and water) to stick the tortilla in a triangle shape. It basically acts as glue.

(Update: My friend tried these out, she used just water to stick the edges together and they turned out good, so you can skip the flour and water paste and use just water to moisten the edges to stick them together. Thank you, Manasa for your feedback!)

Hold the pointed end down and fill the samosa with the filling.

The filling that is used is this potato masala.

Do not overfill, around one tablespoon of filling should be enough.

Close up the samosa using the flour paste around the edges.

Fill in all your samosas.

Brush them on both sides with oil, I used olive oil but you could use canola, vegetable or peanut oil.

Put in the air fryer at 350 degrees for around 10 minutes, turning once in between.

Potato Masala

Potato masala

Potato masala is a really quick, easy, and tasty recipe. You can make it in about 10 minutes if you have pre-boiled potatoes.

With just a few ingredients you will have a tasty dish in about 10 to 15 minutes.

What do you need to make this Potato Masala?

Potatoes – Any potatoes are fine, I used Russet potatoes in this recipe.

Onions – Yellow onions are my go-to onion for cooking.

Ginger – I store my ginger in the freezer, as it lasts much longer and it’s very easy to grate or chop.

Green chilies – I do store my green chilies in the freezer too, to make them last longer.

Cilantro – Chopped cilantro leaves for garnishing

Turmeric powder – This is what gives the potato masala its brilliant yellow color!

Salt to taste

For seasoning:

Oil – Any high heat oil like canola, vegetable, peanut, or olive oil.

Mustard seeds – Black mustard seeds

Split urad dal – White urad dal, split.

Curry leaves – The flavor of curry leaves is something different and gives any dish a delicious taste

This is usually eaten with Dosa ( a lentil and rice crepe), it is used as a filling for the Masala Dosa. But it is a very versatile recipe and can be eaten in many different ways.

You can eat it as a filling in a sandwich, in a chapati or a paratha like a roll. Also, it is great as a filling for samosas and puffs. You can try it with my air fryer tortilla samosas, it tastes delicious.

Potatoes with Mild Indian Spices

Ingredients

  • 2 Potatoes cut into cubes
  • ½ Yellow Onion sliced
  • ½ inch Ginger chopped
  • 1 Green Chili chopped
  • 2 tbsp Cooking oil (canola, olive or sunflower)
  • ½ tsp Turmeric Powder
  • Salt to taste
  • Coriander leaves for garnishing

For seasoning

  • 1 tsp Mustard seeds
  • ½ tsp Split urad dal
  • 1 sprig Curry leaves

Instructions

  • Microwave potatoes for around 4 minutes till cooked. This is my shortcut method to cut down cooking time. If you do not want to use the microwave you can boil potatoes on the stove top, or in a pressure cooker.
  • Heat oil in a pan. Add seasoning ingredients. When the mustard splutters. Add onions, chopped ginger, and green chilli. Fry for a few minutes till opaque.
  • Add turmeric powder and salt. Mix well.
  • Add the boiled potatoes with about 1 cup of the cooking water. Cover and cook for about 10 minutes.
  • Use a potato masher or fork to mash the potatoes. If you like it chunky you can leave a few pieces of potato unmashed. Adjust the salt.
  • Garnish with chopped coriander leaves.

Notes

  • If you do not have curry leaves or split urad dal, you can skip them. It will still be just as good. 
  • I did not have cilantro for garnishing, so you can just leave it out like I did.

Air Fryer Salmon Fish Fry

Air Fryer Salmon Fish Fry is a real favorite in my house, my kids absolutely love it.

The Air fryer is one of my favorite gadgets in the kitchen. Apart from the fact that you can fry using just a little oil, it gets the job done really fast! That’s a win in anyone’s kitchen, don’t you agree?!

Salmon is one of the tastiest types of fish that I have ever tried. It is a firm fish that stands up well when air-fried, it does not fall apart easily. 

The other options that you could try are kingfish, halibut, or Mahi-mahi. Any firm fish is best.

The marinade is a few basic spices, yogurt, ginger garlic paste, salt to taste, and lime juice. 

It’s best to marinate at least for an hour, but I have even air-fried the fish immediately, and it tasted good too! 

Another option is marinating and freezing the fish, so you have it on hand. You could just thaw it overnight in the refrigerator and air fry like normal.

You could leave the skin on if you got it with skin. After it’s fried, the skin peels off easily. If you like eating the skin you could do so but we prefer to take the skin off. 

How to make this Air fryer Salmon Fish Fry:

Turn on the air fryer to 350 degrees (F). Drizzle some oil ( around 1 tbsp) on the marinated fish pieces. You can use olive oil, canola oil, vegetable oil, or coconut oil.

Place the fish in the air fryer basket using tongs.

Make sure you do not put more than 4 pieces of fish, so there is enough air to circulate around them. Close the air fryer.

Cook for 10 minutes, turn the fish pieces in between. Once done gently remove fish from the basket, your delicious air-fried fish is ready!

The fish is so flaky and juicy. My whole family loves this air-fried fish, it is on the menu every single week!

Salmon fish fry can be eaten just as a snack, eat it with rice and dal,  eat it in a taco, pita bread, paratha, naan, etc.

My favorite is eating it with avocado salad. So delicious!

Ingredients

  • 6 Medium slices of salmon fish
  • 2 tbsp Whole milk yogurt
  • 1 tsp Ginger garlic paste
  • Juice of 1/2 lime

Spices

  • 1 tsp kashmiri chilli powder use extra if you like it spicy
  • ½ tsp Coriander powder
  • ¼ tsp Turmeric powder
  • 1 tsp Salt or to taste

Instructions

  • Wash and pat dry the fish pieces.
  • Mix the rest of the ingredients for the marinade. It will be a nice red color because of the kashmiri chilli powder. Do not add water, the yogurt and lime juice is enough to mix it well.
  • Add this marinade to the fish pieces and mix well so all the pieces are coated well.
  • Cover it and keep it in the refrigerator for an hour. If you do not have time to let the marinated fish sit you can fry it immediately too.
  • When ready to fry, drizzle about 1 tbsp oil all over the fish. Mix it. Place around 3 or 4 pieces of fish in your air fryer basket. Do not over crowd the basket.
  • Turn on the air fryer at 350°, and let the fish cook for 10 minutes turning once in between.
  • Once done remove from the air fryer basket. Garnish with onion rings.

Notes

Depending on the size of the fish pieces you might need to add less or more time. 
Thinner slices will be done sooner than the thicker ones. Keep an eye on them so they do not burn
If you do not have an air fryer, you could still pan fry these or bake in an oven.

Do you get into a breakfast rut where you have the same thing almost every day? Sometimes I do and wish that I could change it up to have something different on my menu.

After giving it some thought, I decided on this list of 5 healthy and quick breakfast options.

These are very common recipes but thought I will share the recipes I use.

Granola

There are millions of granola recipes out there! In an attempt to find the best one, I have been experimenting for the last few years. (yes you read right, I did say years!!)

After all the searching and a lot of experiments, I finally found the best one that has become my go-to granola recipe! Hurray! This recipe is from the blog Cookie and Kate. Thank you, Kate! My search is finally over. You can find her recipe here: http://cookieandkate.com 

I follow her recipe with a few variations. The combination of nuts that I use are almonds, pecans, walnuts, and cashew nuts. Additionally, I use 1/4 cup of flaxseeds. However, I do not use any dry fruits as that is my personal preference.

The fun part about making granola is you can customize it to your own taste and make it your own. I recently made another batch and added 1/4 cup quinoa before baking, it turned out quite delicious and crunchy.

If you whip up a batch over the weekend, granola is an option any day of the week without much effort!

Enjoy it with milk and berries/bananas etc or like a parfait with yogurt and berries, or just as is! 

 

 

Avocado Toast

Avocado Toast is as simple as it sounds! Toast up a slice of bread, slice or dice or mash an avocado, put it on the toast, add a little lime juice, salt, and pepper, that’s your basic avocado toast.

This one is a favorite of my kids, I guess it’s the name that makes a difference, they just find it interesting!

So easy to make and can be done in under 5 minutes.

Heat a pan on medium heat.

Make a hole in the middle of a slice of bread. ( I use a plastic medicine dispenser, it is just the right size).

Butter one side of the bread, put that side down on the pan, then butter the other side while it’s on the pan.

Crack an egg into the hole on the bread. Try to spread the egg white evenly. Season with salt and pepper. Let it cook for a few minutes. Place the bread circle that you cut out on top of the hole lightly. Gently flip the bread, and let it cook on the other side.

My kids like the egg fully cooked so I break it up to cook it faster. My personal preference is a runny yolk, I think that it’s almost like a sauce, but hey that’s just my choice!!

Your egg in the nest is ready. This too can be topped with cheese, bacon, avocado, spinach, etc

This is an easy blender recipe with just a few ingredients, made with heart-healthy oats for the win!

In a blender add,

1/2 cup rolled oats

Blend oats into oat flour.

Add:

3/4th cup milk, 1 egg, 1 tbsp sugar, 1 tsp vanilla essence

Blend all together. Make crepes. It is essential to use a non-stick pan to keep your crepes from sticking to the pan. The batter is thin and the oats tend to settle, so mix it every time before you make another crepe. 

Makes about 6 crepes. These are filling and tasty so you might end up doubling the recipe!

My kids love them with Nutella. So I just roll them up and it is a healthy tasty breakfast ready in no time.

Quick French Toast

There are lots of recipes for french toast. However, I follow my Mom’s recipe that she used to make for us when we were kids. It is a very basic recipe and can be whipped up any time not just for breakfast.

A childhood memory of mine which I remember is coming home from school in the afternoon and my Mom would have made french toast for us, we could smell it as we opened our front gate to get to our house! Those are really happy memories that I will cherish forever. Thank you, Mom!

Firstly In a shallow bowl, beat one egg with a fork till frothy, then add 2 tablespoons sugar, 1 tsp of vanilla extract, and finally around 3/4th cup of milk. Beat the mixture until it’s mixed.

Dip your bread slices in this mixture and fry on a preheated pan with a little butter or ghee. Fry on both sides till sugar has caramelized and it’s nice and brown, be careful not to burn it.

Dust with powdered sugar. Serve hot.

French Toast

Options that it can be eaten with are strawberries, maple syrup, honey, bananas, blueberries, etc.

2 Houseplants that you can multiply for free!

2 Houseplants that you can multiply for free are Pothos and Lucky Bamboo. Of course, there are many more that can be propagated but I am sharing with you the two that I have succeeded with.

Do you love houseplants? I have always loved having houseplants, but struggled for years to keep most of them alive! It was either too much water, too much sun, too little water, not enough sun. But I have not given up and wanted to share with you 2 of my success stories!!

Everyone likes the idea of having plants without spending money! So propagating your existing plants is the easiest way of multiplying your plants without spending a dime.

I have tried and tested propagating these plants and have had great results. So I just had to share my success with multiplying these 2 plants.

 You are guaranteed to see at least these 2 plants in my house! 

Another thing that I wanted to share is that with house plants, sometimes you find the most annoying part is the tiny little flies( Fungus Gnats) They just multiply like crazy and it’s really hard to get rid of them. I have researched all sorts of ways to get rid of them and have tried lots of products, but the only product that has worked is called Mosquito Bits, I heard about it on a gardening youtube channel. You just have to sprinkle it in your pots., and you can be sure you will not see these pesky insects again!

Pothos ( also known as money plant)

The perfect place to have this plant is in the bathroom, the humid conditions make it thrive. It does not need direct sunlight. It is also a great plant to purify the air in your house. However, this plant can survive anywhere in your home where it gets some indirect sunlight. 

It is not a very fussy plant either, so you can water it once every 4 or 5 days, or when the soil is dry.

If you do not have a pothos plant, to begin with, you can get one at any gardening store or on Amazon

Or if you really don’t wish to spend any money, ask a relative or friend for a cutting!!

How to Propagate Pothos:

The best part about propagating this beauty is that every leaf can be used to grow new roots and become a new plant. The root nodes on the stem are present right below each leaf.

To propagate, Using sharp scissors cut off about 6 inches of the stem with leaves. Remove the leaf closest to the base, place the stem in a jar or vase of water.

If you want to have many new plants cut a long piece of the stem with many leaves and then you cut each leaf making sure to cut below the root node. Put all these leaves in water, making sure the nodes are submerged.

I have mine in a glass vase as I love seeing these plants in water. Change the water every 2 weeks.

This can be transferred to the soil once the roots start appearing,  but I have it in water as I love the look of it in water.

Bamboo- ( Lucky Bamboo)

Bamboo plant cuttings grow really fast! In literally a few days to a week, you will see roots popping out! The lucky bamboo grows in spirals. But it is important to note that your cutting will not grow that way, it will just grow straight up. This is an easy plant to take of as it needs watering just once every 15 days or so. Also, it thrives in indirect sunlight. It is a beautiful ornamental plant which is also considered lucky in some cultures.. hence the name!

You can find Lucky Bamboo in any gardening center or on Amazon

How to Propagate Lucky Bamboo:

Take a healthy cutting off of the mother plant, it should have at least one leaf joint. Put the cutting in a glass vase with some pebbles and water. In a few days, you should see little roots appearing.

Change the water every 12 days or so. I usually wash the vase and pebbles and the plant as well to prevent any sliminess from forming. Keep this plant in a well-lit area but not in direct sunlight. Bamboo cutting

Quick Chicken and Egg Noodles

This is just a basic Quick Chicken and Egg Noodles recipe, very simple to make, and really tasty. It is a favorite of my kids. They ask for it almost every week!

Basic Ingredients required for Quick Chicken and Egg Noodles:

Noodles:

What kind of noodles to use?

The best kind of noodle to use is thin spaghetti, I have also used regular spaghetti, egg noodles, and even linguine but I always go back to thin spaghetti. Of course for authentic Chinese noodles, egg noodles are preferred. An important thing to remember is not to overcook them. I follow the directions on the box for ‘al dente’.

 Vegetables needed:

You can use up whatever vegetables you have on hand. Carrots, cabbage, broccoli, peas, bell peppers, corn, or green beans can be used.

I used carrots, broccoli, green bell pepper, and cabbage in this recipe. Cutting and prepping the vegetables in the same size helps them cook evenly, you want them to still be crunchy in the end.

Other than the above vegetables, you will need spring onions or scallions and chopped garlic.

Chicken:

Which cut of Chicken is best?

You could use chicken breasts, thighs, or tenders. My personal preference is chicken thighs as the thigh meat is more tender and remains juicy after cooking. The chicken breast and tenders usually become a bit dry when cooked.

Other ingredients:

Eggs, Soya Sauce, Oil, Salt and Pepper to taste, Chicken stock cube(optional)

How do you make these Quick Chicken and Egg Noodles?

Cut up the chicken into bite-sized pieces using kitchen scissors. After that marinate it in salt, pepper, and soya sauce. I do that just before I start prepping the veggies, so it has about 10 to 15 minutes to marinate. Once the chicken is cooked, save it along with its juices to add later once the noodles and vegetables are done.

Keep all the ingredients ready, once your wok or  Non-stick wok is hot, it just takes 5 minutes for the noodles to be done. The vegetables just need a couple of minutes to cook, be careful not to overcook them, they still need to be crunchy.

The egg can be scrambled and added in the end.

If you are vegetarian, just substitute tofu/paneer for the chicken or just go with only vegetables.

Chicken and Egg Noodles

Ingredients

  • ½ box Thin Sphagetti cooked till al dente
  • 1 tbsp olive oil
  • 1 carrot cut into sticks
  • ½ green bell pepper cut into sticks
  • ¼ cabbage sliced thin
  • 4 broccoli florets sliced thin
  • 2 scallions chopped, green parts saved for garnishing.
  • 2 garlic cloves chopped
  • 3 tbsp soya sauce
  • 2 eggs scrambled
  • Salt and pepper to taste

For marinating chicken

  • 1 chicken thigh cut into small pieces
  • 1 tbsp soya sauce
  • Salt and pepper to taste

Instructions

  • Cook sphagetti till al dente and set aside. Drizzle with a little olive oil and mix it with a fork so the noodles do not stick to each other.
  • Marinate chicken with soya sauce, salt and pepper.
  • Prep all the vegetables. Chop up scallions and garlic. Cut vegetables into sticks as shown in picture.

  • Heat up a wide pan on high heat. Keep all your ingredients ready.
  • Add marinated chicken and cook. It will cook fast as the pieces are small. Take out the chicken and set aside.
  • Add the scallions and garlic, stir it and immediately add the veggies, Season with salt and pepper. Dont cook too long, as they still have to be crispy.
  • Add noodles, soya sauce and mix everything. Add in chicken pieces. Scramble 2 eggs and add them in. Mix and switch off.
  • Garnish with the chopped scallions.

Notes

  1. You can make this vegetarian by excluding chicken and eggs.
  2. You can add vegetable or chicken soup cubes to add even more flavor to your noodles. 
  3. The entire process from the time you heat the oil till you're done should just take 5 minutes as your cooking on high heat.
